… then make some peanut butter cookies. It’s happened to the best of us. We are at the grocery store stocking up on the things we like to eat, and without realizing it, we’ve found our way home having brought with us a version of something that doesn’t sit quite well with our personal taste.
Personally, I blame food manufacturers. There are too many damn options, and it gets right confusing for the average shopper when you’re faced with 40 different configurations of soda cracker. Life must have been easier in communist Russia, right? One store, one line-up, one type of cracker… no thinking required other than setting the alarm to get up early enough!
Anyhow, a member of the household I’m currently hanging out with found himself in this very situation the other day. A ‘smooth’ peanut butter man, he discovered to his great disappointment that he had come home with a jar of ‘crunchy’. No good.
I love to bake, so I suggested that once I got my hands on that jar, ‘crunchy’ would neither be a bad word nor a barrier to consumption.
Giving people a recipe is always a difficult thing for me. I do like to work from a basic recipe (I don’t find I have a lot of talent for creating from scratch), but it is pretty much a guarantee that I will mutate the thing in at least one way. Baking is definitely a science and is much less forgiving of rule-breaking than cooking. But I am what I am…
Generally speaking, I would recommend using a recipe that calls for a cup of peanut butter, 2.5 cups of flour, a cup of brown sugar, 2 eggs, half a cup of butter (depending on the kind of peanut butter you use), 1 tsp each of vanilla, baking soda and powder, and a little salt. Bake at 325 F for about 15 minutes, tops. Don’t forget the nifty little smash and crosshatch with the fork routine…
If you like a moist or chewy cookie, try wrapping the dough in plastic and chilling it for a few hours in the fridge.
One little extra thing I did with this particular batch today. Melted chocolate painted onto the bottoms of them. Certainly not a healthy cookie recipe, but it is very tasty. I’m not sure whether I will have any left by the time the layer of chocolate dries, but I do know that the crunchy peanut butter disappointment is no longer an issue
